Chicken kebab + radicchio salad

Leftover kebab over radicchio and cucumber.

Ingredients
  • Leftover kebab meat — 4¼ oz
  • Radicchio — 2 cups
  • Cucumber — 5¼ oz (½)
  • Garlic-infused olive oil — 1 Tbsp
  • Lemon
Method
  1. Toss the radicchio and cucumber with oil and lemon.
  2. Warm the kebab meat and pile on top.
Notes

The bitterness of radicchio plays against the slightly sweet kebab marinade — sub endive 1:1 if radicchio isn't available.
