Chicken kebab + radicchio salad
Leftover kebab over radicchio and cucumber.
Ingredients
- Leftover kebab meat — 4¼ oz
- Radicchio — 2 cups
- Cucumber — 5¼ oz (½)
- Garlic-infused olive oil — 1 Tbsp
- Lemon
Method
- Toss the radicchio and cucumber with oil and lemon.
- Warm the kebab meat and pile on top.
Notes
The bitterness of radicchio plays against the slightly sweet kebab marinade — sub endive 1:1 if radicchio isn't available.
