Chicken lettuce cups

Chicken, cucumber and radish in lettuce cups.

Ingredients
  • Cooked chicken — 4¼ oz (diced)
  • Lettuce — 1½ oz (4 leaves)
  • Cucumber — 5¼ oz (½, diced)
  • Radishes — 2½ oz (4, diced)
  • Cilantro & mint
  • Garlic-infused olive oil — 1 Tbsp
  • Lime
Method
  1. Toss the chicken, cucumber and radish with oil, lime and herbs.
  2. Spoon into lettuce leaves.
Notes

Dice everything to a similar small size so each lettuce cup gets a balanced bite. Romaine or butter-lettuce leaves are the most cup-shaped; iceberg shatters.
