Lemon-herb baked cod

Baked cod with roasted zucchini and green beans.

Ingredients
  • Cod — 6 oz (1 fillet)
  • Zucchini — 3½ oz (½)
  • Green beans — 3 oz (handful)
  • Garlic-infused olive oil — 1 Tbsp
  • Lemon
  • Dill
  • Sea salt & pepper
Method
  1. Heat oven to 400°F (200°C). Start the oiled veg roasting 5 minutes.
  2. Add the seasoned cod and lemon; roast 12–14 minutes until it flakes. Finish with dill.
Notes

Start the vegetables 5 minutes ahead so they're partly cooked when the cod goes on — otherwise the fish overcooks waiting for the veg.
