Poached chicken batch + bok choy

Gently poached chicken for the week, plus bok choy.

Ingredients
  • Chicken breast — 1 lb 2 oz (3–4)
  • Ginger (a few slices)
  • Bok choy — 7 oz (4 baby)
  • Sea salt
Method
  1. Poach the chicken with the ginger in barely-simmering water 12–15 minutes; rest in the liquid 5 minutes.
  2. Steam the bok choy 3–4 minutes.
  3. Slice the chicken; refrigerate the extra portions.
Notes

Bare-simmer poaching keeps the breast tender. Cool the chicken IN the poaching liquid — it absorbs back some moisture as it cools and stays juicy.
