Poached chicken batch + bok choy
Gently poached chicken for the week, plus bok choy.
Ingredients
- Chicken breast — 1 lb 2 oz (3–4)
- Ginger (a few slices)
- Bok choy — 7 oz (4 baby)
- Sea salt
Method
- Poach the chicken with the ginger in barely-simmering water 12–15 minutes; rest in the liquid 5 minutes.
- Steam the bok choy 3–4 minutes.
- Slice the chicken; refrigerate the extra portions.
Notes
Bare-simmer poaching keeps the breast tender. Cool the chicken IN the poaching liquid — it absorbs back some moisture as it cools and stays juicy.
