Sweet-potato & beef hash
Sweet potato, ground beef and kale.
Ingredients
- Sweet potato — 2¼ oz (small dice)
- Ground beef — 3½ oz
- Kale — 1 cup
- Green-onion tops — 2 Tbsp
- Garlic-infused olive oil — 1 Tbsp
- Sea salt & pepper
Method
- Crisp the sweet potato in the oil over medium 6–7 minutes.
- Push aside; brown the beef.
- Fold in the kale and green-onion tops; season.
Notes
85/15 ground beef gives the right fat ratio; very lean (93/7) leaves the hash dry and the sweet potato never gets a chance to glaze.
