Sweet-potato & pork herb hash

Sweet potato and ground pork with herbs.

Ingredients
  • Sweet potato — 2¼ oz (small dice)
  • Ground pork — 3½ oz
  • Chard — 1 cup
  • Green-onion tops — 2 Tbsp
  • Garlic-infused olive oil — 1 Tbsp
  • Sage & thyme
  • Sea salt
Method
  1. Cook the sweet potato in the oil over medium 6–7 minutes.
  2. Push aside; brown the pork with the herbs.
  3. Add the chard and green-onion tops; season.
Notes

Pork renders enough fat to season the chard — cut the oil for the chard step if the pan is already glossy.
