Sweet-potato & pork herb hash
Sweet potato and ground pork with herbs.
Ingredients
- Sweet potato — 2¼ oz (small dice)
- Ground pork — 3½ oz
- Chard — 1 cup
- Green-onion tops — 2 Tbsp
- Garlic-infused olive oil — 1 Tbsp
- Sage & thyme
- Sea salt
Method
- Cook the sweet potato in the oil over medium 6–7 minutes.
- Push aside; brown the pork with the herbs.
- Add the chard and green-onion tops; season.
Notes
Pork renders enough fat to season the chard — cut the oil for the chard step if the pan is already glossy.
