Sweet-potato & turkey hash, ginger

Ingredients
  • Sweet potato — 2¼ oz (small dice)
  • Ground turkey — 3½ oz
  • Spinach — 1 cup
  • Ginger — 1 tsp, grated
  • Green-onion tops — 2 Tbsp
  • Garlic-infused olive oil — 1 Tbsp
  • Sea salt
Method
  1. Crisp the sweet potato in the oil over medium 6–7 minutes.
  2. Push aside; brown the turkey with the ginger.
  3. Fold in the spinach and green-onion tops; season.
Notes

Grate the ginger fresh; ground ginger is more acrid and lacks the brightness this hash leans on.
