Sweet-potato & turkey hash, ginger
The turkey hash with a gingery edge.
Ingredients
- Sweet potato — 2¼ oz (small dice)
- Ground turkey — 3½ oz
- Spinach — 1 cup
- Ginger — 1 tsp, grated
- Green-onion tops — 2 Tbsp
- Garlic-infused olive oil — 1 Tbsp
- Sea salt
Method
- Crisp the sweet potato in the oil over medium 6–7 minutes.
- Push aside; brown the turkey with the ginger.
- Fold in the spinach and green-onion tops; season.
Notes
Grate the ginger fresh; ground ginger is more acrid and lacks the brightness this hash leans on.
