Turkey herb meatballs, zoodles
Egg-free turkey meatballs over zucchini noodles.
Ingredients
- Ground turkey — 12¼ oz
- Chia seeds (for chia egg, + 3 Tbsp water)
- Arrowroot flour — 2 Tbsp
- Green-onion tops — 2 Tbsp
- Basil & parsley
- Zucchini — 14 oz (2, spiralized)
- Garlic-infused olive oil — 2 Tbsp
- Sea salt & pepper
Method
- Stir the chia into 3 Tbsp water; rest 8 minutes.
- Mix the turkey, chia gel, arrowroot, green-onion tops, herbs and seasoning; roll into ~16 balls and chill 10 minutes.
- Brown the meatballs in the oil, then cover and cook through ~8 minutes (165°F / 74°C).
- Toss the zoodles in a hot pan 1–2 minutes only; serve with the meatballs and basil.
Notes
Chia-egg + arrowroot is the egg-free bind. Chill 10 minutes before frying or the balls slump in the pan. Zoodles cook in 1–2 minutes total; longer and they release water and the dish goes soupy.
